This Pandan Cake Recipe Is What Dreams Are Made Of

Pandan cake is a light, fluffy, green-colored sponge cake flavored with the juices of Pandana leaves. It is also known as pandan chiffon. The cake is a fan favorite in Indonesia, Malaysia, Singapore, Vietnam, Cambodia, Laos, Thailand, Sri Lanka, Hong Kong, China, and also the Netherlands. The cake is not very common in Egypt due to the foreign component, which is the Pandana. However, it’s 2023 and Asian shops all over Egypt have made it easy for us to get such item! We will go through the recipe step by step, it takes only one hour for preparation and cooking. So, let’s go!

INGREDIENTS:

  1. 5 egg yolks
  2. 20 gm caster sugar
  3. 100 gm cake flour
  4. 1 tsp baking powder
  5. 100 ml coconut milk
  6. 2 Tbsp pandan juice (see below for making pandan juice)
  7. a few drops pandan essence/pandan paste, optional
  8. 3 Tbsp olive oil

INGREDIENTS OF EGG WHITES:

  1. 5 egg whites
  2. 60 gm caster sugar
  3. ½ tsp cream of tartar

INGREDIENTS OF PANDAN JUICE:

  1. 10 pandan leaves, fresh or frozen
  2. 1½ Tbsp water

INSTRUCTIONS:

  1. Preheat oven on medium heat. Beat the egg yolks, whisk, and mix in 20 grams of sugar. Add coconut milk, pandan juice. Combine well.
  2. Stir the cake flour and baking powder into the egg yolk mixture in three batches. Combine thoroughly. Finally, drizzle with olive oil. Place aside.
  3. Make sure there is no water or oil in a big clean dish. Using an electric mixer, whip the egg whites until bubbles appear. Pour in the cream of tartar. After thoroughly combining, add the 60 grams of sugar in three batches, one-third at a time, beating well between additions. Keep beating until firm peaks emerge.
  4. Spoon out 1/3 of the beaten egg whites and add to the egg mixture. Lightly fold in the rest of the beaten egg whites with a spatula, until it’s all in harmony. 
  5. Pour into the cake pan and bake for 35 to 40 minutes in a preheated oven. If your cake begins to brown after the first 15 minutes of baking, adjust the heat to medium-low and continue to bake until cooked through. When a needle is placed in the center, it comes out clean.
  6. Remove cake from the oven. Invert the pan immediately. Allow it to cool completely.

INSTRUCTIONS FOR PANDAN JUICE:

  1. Chop pandan leaves into chunks, add it to a food processor with 1½ tablespoons of water, turn them into small pieces.
  2. Place pandan leaves in a muslin bag or a piece of cloth you can squeeze the juice out of it, you can also squeeze it with your hands if you like.
